Healthy Homemade Ice Cream

I have been on a healthy lifestyle journey since February. I call it a journey because this is not a quick trip. I have lost 42 lbs so far. I get a lot of questions about how I did this and what the heck do I eat. So, I thought that I would share one of my favorite treats that is easy to make, sugar free, whole 30 approved & delicious!

Who says that ice cream can't be healthy? Not me! Even my kids love this yummy frozen treat.
Here's how to make it.

1- Gather your ingredients

Healthy Homemade Ice Cream

2-3 c. frozen pineapple 
10 fresh strawberries-washed and cut
1 can full fat coconut milk-chilled

2- Put all of your ingredients in your heavy duty blender & mix until blended. 
I use a vitamix and it works fantastically!

3-You can devour now or you can transfer the ice cream to a container and 
put it the freezer to harden. 
We usually gobble it right up, but if you are not in a hurry to eat it, or want it to be scoopable, I would put it in the freezer for a few hours.

Now you are ready to enjoy...our favorite part!

Like all ice cream..this recipe can get a little messy. We always have Wet Nap wipes handy.
I love these things!

Why do I love them you ask?

1. They are super soft
2. They are strong enough to clean up our messes
3. Plus they moisturize ( I have 3 girls..this is a big deal at our house)

I use Wet-Nap wipes all the time! There is always a container in my car, craft room and kitchen. You can pick up Wet-Nap wipes at Walmart in the napkin aisle. Plus, you can print this coupon to help you save  even more money on Walmart's low prices. (while supplies last)
